Nestled in the heart of Vail Village, The Gambit Bar invites you into a world where warm aesthetics meet comfortable spaces, offering not just a place to sip and savor, but experience a journey that seamlessly blends classic charm with contemporary allure.
On December 22, the doors open to artful mixology, elevated bites, warm ambiance, and inspired interiors at The Sebastian – Vail.
Artful Mixology
The Gambit Bar’s cocktail list inspires like The Sebastian – Vail’s exquisite art collection. Seek out the striking sculpture Mujer con Zorro (Lady with Fox) by surrealist artist Leonora Carrington, recognized as one of the most original and visionary artists and writers of the 20th century and the namesake of The Gambit’s Carrington Club, a delectable riff on a decades-old classic cocktail.
The Shiffrin 75, named for Vail’s beloved superstar skier, is a twist on the French 75, trading its original gin base for cognac and incorporating lingonberry gastrique, fresh lemon, and Cava bubbles atop—a modern play on a true classic.
Warm up with a handful of hot options, including the Hot Apple Ginger Toddy. Head Mixologist Garret Cosgrove crafts house-spiced rum aged with Old World spices like cardamom, cinnamon, clove, and star anise. A ginger-infused sorghum syrup brings it all into perfect balance.
Thoughtful mocktails, a large selection of both Colorado craft beers and imported selections, and a Wine Spectator Award-winning wine program courtesy of sister restaurant Leonora’s stunning 400-bottle wine tower round out The Gambit Bar’s drink offerings.
Elevated Bites
Chef Kevin Erving crafts classic shareables with unexpected tweaks and house-created flavors. Start with whipped ricotta topped with mint and chili-infused honey served with spiced pita, or tuck into an artfully presented charcuterie board of melt-in-your-mouth tender Iberico ham, local charcuterie from Denver-based Elevation Meats, and pickled Piparra peppers from Spain. Satiate your appetite with a delectable 7X Waygu burger or a wood-fired flatbread to complement your cocktail experience and satiate your appetite after a day spent playing in the mountains.
Refined Interiors
Designed by the international design studio Cuaik CDS, Vail’s newest lounge exudes warmth and openness, creating an ideal setting for cozy evenings amid an elevated Rocky Mountain alpine vibe. First impressions are everything, and The Gambit Bar delivers.
A vibrant green marble bar features a sophisticated green leather base, complemented by a vintage brushed brass structure showcasing a curated, backlit liquor collection. The cozy fireplace is the backdrop for intimate conversations extending into the night. A continuous booth along the perimeter intuitively keeps conversation and energy flowing, while comfortable nooks overflowing into The Sebastian – Vail’s lobby extend The Gambit Bar experience.
Live Music Nightly
A night at The Gambit Bar means live music from some of the best musicians in Vail Valley, all performed atop a brand-new stage area. From jazz saxophonist Brent Gordan and classics with a bluegrass kick by duo Natalie Wade and Nick Steingart, to The Gandy Dancers’ irresistible dance tunes and eclectic, soulful presence of Rob Eaton, Jr., every night brings something new.
After the après fun wraps up, house jazz music featuring classics from the Rat Pack to Michael Bublé, Miles Davis to Ella Fitzgerald, provides the perfect complex pairing to the killer cocktail options.
