Chef Kevin’s award-winning dish, Crispy Masa “Mixiotes” with braised beef, salsa verde, lime crema, salsa roja, pickled Fresno chiles, and cilantro, impressed both judges and guests with its refined technique, locally inspired ingredients, and bold mountain flavors—a true reflection of The Gambit Bar’s culinary identity.
